Description
Ingredients
1. 3 cups tapioca flour
2. 1/2 cup extra virgin olive oil
3. 1/2 cup Parmesan cheese
4. 1/2 cup Mexican cheese blend (You can substitute it for mozzarella cheese)
5. 1 3/4 cup milk
6. 1 tsp. Salt
7. 2 eggs
Directions:
1. Place all ingredients in a blender, starting with wet ingredients then adding dry ingredients to avoid flour from sticking to the sides of the blender.
2. Blend until mixture is smooth, scraping down the sides of blender as needed.
3. Pour mixture into small muffin pan, filling to the rim.
4. Bake for 20 minutes in a preheated oven set to 400 degrees F.
