After the outrageous audio audacity of the Mad Professor's remix in a recent upload to this channel, it's back to sanity. This straight-ahead traditional instrumental was a favourite of the band members and Cajun dancers in the audience. It also took the fancy of the BBC who used as the theme tune for their ‘Cooking Oils’ series on BBC2 in 1994. Many Cajun tunes get their titles from place names and this one is named for the town of Ossun, near Lafayette, Louisiana. (For some reason the name is misspelled as ‘Osson’ on the album.) Confusingly, however, the same tune has sometimes been known as the ‘Opelousas Two step’. Never mind what it’s called - it’s a great tune. Allons danser!
